(Hint: TX in the Basque language is pronounced like CH in English ... so phonetically the winery is pronounce Choow-Man Et-Chen-Is.) The wine produced here is called Txakoli (chalk-oh-lee). The owner put out an amazing seafood spread for us when we arrived. The picture doesn't do it justice but just beyond that table are jaw-dropping view over the Bay of Biscay all the way to San Sebastian and, on a clear day, all the way to France. The owners prepared fresh anchovies which they cured themselves in garlic and olive oil, along with fresh tuna and, of course, the ever present jamon y queso. We learned that the best way to eat these delicious make-your-own pintxos was to first dip your bread into the anchovy olive oil, then add some tuna and onion, and then top with a freshly cured anchovy. Even people who said they hated anchovies were going back for thirds ... and fourths ... and fifths. But after 89 days in Italy (one day shy of needing a visa!) it was time to go home ... but it was still tough saying good-bye to so many of my new friends.
